Cooking Pasta

Boil water in a large pot. When the water reaches a light boil, add a generous amount of salt. Per serving (12 pieces of filled pasta or 100 grams of dried pasta) you will need at least 1/2 a tablespoon of salt.

Let the water reach a rolling boil. Reduce the heat slightly and add in your pasta.

For Filled pasta - 

Cook the pasta till it floats on the surface. Add a minute to the cooking time if you're using the pasta from the freezer. Add a ladle of the pasta cooking water into your sauce. This enriches flavour, helps thicken the sauce and helps the sauce coat the pasta better 

​

Remove your filled pasta from the water with a slotted spoon and add it into your sauce. Toss around for less than a minute and remove from the heat. Do not overcook the pasta!

Garnish with some cheese and enjoy!

For Dried Pasta:

Add the pasta into the boiling water. Let it cook for 3-4 minutes, Check for doneness.

If it isn't cooked, cook for 30-40 seconds more and check again.

The longer the pasta is stored, the longer it will take to cook. Sometimes it may take upto 7 minutes.

Add a ladle of the pasta cooking water into your sauce. This enriches flavour, helps thicken the sauce and helps the sauce coat the pasta better

Remove your pasta into your sauce, toss to coat and remove from the heat. Do not over cook the pasta

Garnish with some cheese and enjoy!

Storing Pasta

Dried Pasta - We would recommend consuming the pasta as soon as possible however, the pasta can be stored in an airtight container for up to one month outside. The pasta may change slightly in colour, which is normal. If you notice mold on the pasta, please throw it out.

Eggless pasta does not need to be stored in the freezer. 

If you dry pasta contains egg(Spaghetti alla Chittara), please place the nests in a ziplock bag and freeze it. Do not defrost before cooking. You can put the pasta in the boiling water directly from the freezer. Add one minute to the cooking time.

Filled Pasta - Lay the filled pasta out on a freezer-safe plate and place in the freezer for a couple of hours till hard. Transfer into a ziplock and store for a month. Do not defrost before cooking. You can put the pasta in the boiling water directly from the freezer. Add one minute to the cooking time.
